For the next in our sour beer variations, we have a tremendously fruity beer paired with the spice of tonka. Additions of raspberry, cherry, and plum combine to give a lovely dark fruit character that will blend sweet with the light kettle-soured base. From there we conditioned on Tonka Beans for a few weeks until the beer picked up its unique spice and vanilla/cinnamon-like character.
